Easy Healthy Banana Chocolate Chip Pancakes for the Weekend Warrior!

While we believe every day is a good day for pancakes, it is a fact that Sundays are for pancakes. BUT not for just any pancakes… Banana pancakes! And while we would love to make the most elaborate stack of from scratch pancakes, us weekend warriors do not have time for that! SO… we have quick and easy vegan and paleo options for our favorite: banana chocolate chip pancakes! Ingredients
2 soft bananas
2 small pasture raised eggs or two flax eggs
1/2 cup of Almond butter
tablespoon raw wildflower honey!
chocolate chips- we used zimt, a paleo, vegan brand!
Topping
Bee pollen
Raw wildflower honey
Berries
More chocolate chips!
For frying: use avocado oil as it is flavorless, and is meant for high heat! it'll make your pancakes crispy and beelicious!Add all the ingredients, except the chocolate chips, into your blender and pulse until you get a smooth consistency. Add in the chocolate chips and slowly mix them into the batter. Next, add your oil to the frying pan/ griddle and turn on low. Adding about 1/2 cup of batter each time, begin frying your pancakes! Wait until the edges are a light brown, normally around two minutes a side, before flipping. Once all the batter is used, top with your favorite toppings (check out our latest blog post for some inspo) and enjoy!
